My Mom's Gluten, Dairy, Egg, and Sugar Free Banana Blueberry Muffin Recipe

All the credit to this recipe goes to my mom Tonya Dirksen because she is the one who made this recipe up and I am extremely grateful that she did! These muffins have a lovely texture and a yummy taste! I hope you love these as much as I do! :)

3 1/2 cups gluten free flour mix
2 teaspoons baking soda
2 teaspoons cream of tarter
2 tablespoons almond meal
1/4 teaspoon salt
4 mashed bananas
1 cup soy milk
2 teaspoons vanilla
1/2 cup oil
1/3 cup agave
2 cups blueberries

Makes about 30 muffins

Pre- heat oven to 400 degrees. In a large bowl mash the bananas. Add the rest of the wet ingredients. Mix until well combined. Add the dry ingredients and mix until the batter is mostly smooth. Stir in blueberries. Spray muffin tins with non stick cooking spray. Pour an even amount of batter into the muffin cups. Bake for 19 minutes or until cooked all the way through. Check with a tooth pick, when the muffin is ready to eat the tooth pick will come out clean. Place muffins on wax paper to cool and enjoy!

Yummmm!

I'm so happy with how this picture turned out! Isn't it beautiful?

Gluten, Egg and Dariy Free Swedish Meatball Recipe

Swedish meatballs are so yummy. They are super tasty and they have different flavors than what we usually eat so they are good to switch things up. I served these with mashed potatoes and green beans but they are also really yummy on top of pasta. The sauce/gravy is super good and this recipe makes plenty of it. As usual this recipe is gluten, egg and dairy free!

          Meatballs
    1 onion chopped finely
    1 1/2 pounds ground turkey
    1/4 cup potato starch
 couple teaspoons of olive oil
A couple shakes of these spices
  salt
pepper
nutmeg
allspice

Sauce
2 tablespoons earth balance
1/3 cup gluten free flour mix
4 cups beef stock (or broth)
1/2 cup plain soy milk
1 small can of mushrooms
salt and pepper to taste

Pre heat oven to 375 degrees. Pour a couple teaspoons into a medium pot and add onions. Saute until the onion is cooked about 5-10 minutes. In a separate bowl mix the onions with the ground turkey, potato starch and salt, pepper, nutmeg and allspice. Stir with a wooden spoon until well combined. Set a little bit of the meat mixture aside. Shape into meatball shapes and put onto a pan sprayed with a nonstick cooking spray. Bake for 15-20 minutes or until cooked. Place the extra meat mixture back into the medium pot you used to sauté the onions and cook it until the meat is brown and almost burned. Add the earth balance and when that's melted at the gluten free flour bit by bit using a wire whisk to incorporate it. Slowly start adding your beef broth whisking constantly. Add soy milk and keep whisking. Sir in mushrooms and salt and pepper to taste. Once the meatballs are cooked put them into the sauce and let those cook together for about 5-10 minutes then you are ready to eat!
Yum! Serve with mashed potatoes or pasta and green beans!

My Everyday Makeup Routine

So lately my everyday makeup look is pretty basic. I've just been wearing an amount of makeup I feel comfortable dancing in. I could wear more makeup on the days I'm not dancing but I've just been liking not wearing very much makeup.

The first thing I do is concealer. I like  Fresh Complexion Covergirl Concealer I put three dots of that under each eye, a couple dots on my forehead, a little on my nose and a dot on my chin. I rub all the dots in with my fingers until its seamless.
The second thing I do is apply Maybelline Great Lash Volumizing Mascara which has an awesome brush that curls the eyelashes. I apply about three coats of mascara or until I feel they look thick enough.
The third thing I do is my eyebrows. Some days I use a brown eye shadow to fill them in other days I just shape them with Maybelline Great Lash Clear Mascara which does a perfect job of holding my eyebrows in place.
The fourth thing I do is blush. I use elf Studio Blush in the color Pink Passion. I just use a big fluffy brush to apply the blush.
The fifth and last thing I do is lipstick. I love wearing a really bright pink lipstick. My favorite lip color is Revlon Cherries in the Snow. Its so creamy and pigmented, I love it!

That's all I've been wearing on a daily bases. What is your everyday makeup look?

Fresh Complexion Under- Eye Concealer by Covergirl

                                                                Fresh Complexion under-eyeConcealer

This concealer is seriously the best concealer ever. Its only $5-6 for this awesome concealer. There is .37 oz of product. That isn't a lot of product but for the price I think its fine. This concealer helps even out my skin tone really well! The color Creamy Natural is a perfect match for my skin color. I apply the product with my fingers and it blends really nicely. I use this concealer for any discoloration on my face- acne scares, pimples, dark circles. It works really well for all those things. The product dries very nicely and doesn't cake. Once its on my face I don't feel it at all and its very comfortable. I also use this stuff for a eye shadow primer and it works really well! Sometimes I wear this concealer when I'm dancing and it stays pretty well! This concealer doesn't have a strong smell though it does smell like makeup (which would make sense...haha) This is all I use for evening out my skin right now and its all I need! I would highly recommend this product for anyone and everyone! Buy it, use it, love it!! :D That's what I did!

Music I Like From the Late 90s - Early 2000s

I have a thing for music from the late 90s-early 2000s. I really like music from that times. I love the 90s rocker look too! These songs aren't in order of favorites, I don't know which one is my favorite!
The first song I want to share is When its Over by Sugar Ray which was released in 2001. This band just has such a good sound. I love there live performances as well as the studio recordings. Other songs I like from Sugar Ray are Fly released in 1997 (that was a good year :)) and Someday released in 1999.

The next few songs are both Avril Lavigne songs because I love her music from the early 2000s. This Avril Lavigne song is called Fall to Pieces. I'm not sure why but I really like this song. I also like My Happy Ending from Avril Lavigne. I like this one and also she sings good live and vevo has taken care of the bad words for us so we don't have to be worried about that ;) Both songs were released in 2004. The last song from Avril that I want to share with you is Things I'll Never Say this song is my favorite. I love it! It was released in 2002.

Okay, last song has a wonderful original from 1971 and the Fugees made a fun cover in 1996 Killing Me Softly with His Song. I like the hip hop flare to it. I like both versions it just depends on my mood.

So there are some of my favorite songs from the late 90s - early 2000s. I hope you listen to them and tell me what you think! What are your favorite songs from the late 90s - early 2000s?

Gluten, Dairy, Egg and Sugar Free Peanut Butter Cups

These are totally, absolutely delicious. I LOVE THEM!!!! They are really good in the summer when its hot outside its nice to have something cool to eat. But I love them anytime of the year! Plus they are gluten, dairy, egg and sugar free which is good. I got this recipe from a cook book which name I can't remember.

1/2 cup coconut oil
1 cup peanut butter (smooth or crunchy both work well)
2 teaspoons vanilla extract
1/2 cup honey
1/2 cup cocoa powder

Combine first 4 ingredients until smooth. Using half of the mixture pour about a tablespoon into mini cupcake liners or until its about 1/3 of the way full. Put into the freezer and freeze for about 15 minutes or until set. While that's setting stir cocoa powder into the rest of the peanut butter mixture until well combined. Once the peanut butter layer is frozen take them out of the freezer and pour the chocolate on top to fill the rest of the cupcake liner. Put back into the freezer for about 30 minutes or until frozen all the way through! Yummmmmmm! :)

Look at that beauty!

Oh my, isn't it perfect?!

Stila In The Moment Eye Shadow Palette Review

For Christmas my wonderful big sister Rachel gave me the In The Moment Eye Shadow Palette made by Stila. It is the most beautiful palette of colors and I absolutely love it. It contains 10 eye shadow colors.
First Row

Second Row

The first color on the top row is Instinct- an almost white shimmer shadow that's perfect for highlighting the inner corner of the eye and highlighting the brow bone. The pigmentation in Instinct is really good. The next color is Impulse- a light shimmery lavender color. To be honest I probably use this eye shadow least out of all of them. It isn't as creamy and pigmented as the other shadows. That's just my opinion though, you might really like it. The next color is Glance- a bright purple color with a little shimmer. I really like using this color when I want a colored smoky eye look to pat in the center of my eyelid. Next color is Improvise- this color is a deep purple with a pink shimmer. I really love this color to use in my crease. The last color on the top row is Catalyst- a gorgeous black. Now usually I'm not too big of a fan of black eye shadow, I mean really how exciting is it? But this black is really beautiful with little reddish/pinkish sparkles in it. It blends beautifully and I absolutely love it.

Moving on the second row. The row starts with Desire- a light peachy matte color. I use this one as a base for my other eye shadows. The second on is Wonder- a beautiful neutral shimmery color. This eye shadow is one of my favorites, its so beautiful for everyday looks. The next color is Spontaneous- an amazing gold shimmery color. This is my favorite eye shadow from this palette. I love it, it adds that special sparkle to any eye look. The next color is Whim- a pretty medium brow color with a little shimmer. I use this color for many things depending how dark my eye look is that day. Some days I wear it all over my lid others I use in my crease, it just depends how intense I want my eye shadow to be. The last color is Captivate- a super pretty brown with a lovely gold shimmer. This is a beautiful color to wear when you are doing a brown smoky eye.

The packaging is okay but there are a couple things I don't really like about it. I don't really like how magnetic it is, it closes all the time while I'm doing my makeup. It doesn't have a mirror which would be really nice. But on the plus side it has an inspirational quote on the inside which is cool!
This palette is fabulous and I use 8 out of 10 of the eye shadows on a regular bases. It also comes with a full size eyeliner which was really nice too. I would highly recommend this to anyone looking for soft, sparkly eye shadow.

Tomato and Mushroom Chicken

I made this recipe up as I went along the other night and it turned out pretty good! I but this on top of pasta which was yummy. I love pasta with anything! Especially tomatoes and mushrooms.

Ingredients

1 onion finely diced
4 thin chicken breast cut into little pieces
olive oil
1 cup chopped mushrooms
1/2 can of tomato sauce
a splash of wine
1/3 cup diced cherry tomatoes
salt
pepper
garlic salt
rosemary
basil
oregano

Pour about 2 tablespoons of olive oil in a medium size pan over medium heat. Add the diced onions and cook for 3 minutes or until the onions start to get soft. Add the chicken pieces and cook until the chicken is cooked through and the juices run clear and the onions are starting to look golden. Stir in the mushrooms. Once the mushrooms are softened add the tomato sauce and the splash of wine. Cook until its all bubble and it smells good, like 10 minutes. Add the cherry tomatoes and the salt, pepper, garlic salt, rosemary, basil and oregano. I don't know the measurements for the seasonings, just eyeball it and taste it to figure out how much to add. Once its all stirred together its ready to eat!

Gluten, Egg and Dairy Free Mini Meatloaf

These mini meatloaves are packed with flavor and they are gluten, egg and dairy free! Which makes them a perfect allergy free dinner!! I make meatloaf very often and this is my favorite variation I've made up so far! I hope you try this recipe!

Ingredients
1 and 1/2 pounds ground turkey
1 yellow onion finely diced
1 red pepper finely diced
olive oil
1/3 cup oats
salt and pepper
1/2 can tomato sauce
garlic salt, salt and pepper to taste

Preheat oven to 350 degrees and spray a 12 cup muffin tin with cooking spray. In a medium pan heat a couple tablespoons of olive oil. Add diced onions and sprinkle some salt on those. Cook for about 3 minutes stirring often. Add diced pepper and cook for 2-4 more minutes or until the onions are transparent and the pepper is soft. Turn off the heat and stir in the oats. Mix the ground turkey with the onion/pepper/oat mixture. In a separate bowl mix tomato sauce with garlic salt. Add about a tablespoon of the tomato sauce into the meat mixture. Once all of those things are well combined spoon the meat mixture into the muffin tin. Spoon about at teaspoon of the tomato sauce on each mini meatloaf. Then place muffin tin onto a cooking sheet incase any thing spills over. Put in the oven and bake for about 25-35 minutes or until cooked all the way through. Let it cool about 5 minutes then enjoy! :)                                                  Much Love,
